Total Foodie

Since the holidays are approaching, I have decided to post some of my favorite recipes. Not all of them will be traditional holiday food, but perhaps you can start a new tradition or save them for a rainy day. I am gonna start with a definite crowd pleaser, Crawfish Etouffee

Ingredients

2 lbs crawfish peeled and cooked
1 stick butter
2 c onioin chopped
1 c celery chopped
2 c bellpepper chopped
2 bayleaf
1 can diced tomatoes
2 tblsp minced garlic
2 c all purpose flour
1 c green onion
8 c chicken broth
cajun seasoning (tony's, zatarans, ect) which ever you prefer

Melt Butter, add onions, bellpepper, and celery, sautee , add tomato, bayleaf and garlic, cook for about 3-5 min now add flour stir constantly for about 1 min, stir in crawfish continue to stir for 4-5 min add broth 1 cup at a time until you reach your desired consistency heat to a boil then reduce heat, simmer for 30 min add seasoning to taste add green onions cook on medium heat for about 5 min serve over rice and enjoy!
